Hummus

460g cooked chickpeas (2 cans) 3 cloves garlic 1/3 cup tahini pasta 1 lemon 1/4 tsp cumin salt and pepper to taste Paprika and fresh minced parsley for garnish optional

Tabbouleh

1 cup cooked quinoa 3 tomatoes 1/4 cucumber 1/2 red onion 100g coriander 100g parsley 10g mint 1 lemon 2 tbsp quality olive oil salt and pepper to taste

Sweet Potato

1 sweet potato 1/2 tsp cayan pepper 1/2 tsp garlic granules 1/2 tsp paprika 1/2 tsp pink salt

Tahini

1/3 cup tahini 1/3 cup water. 1 lemon 1 tsp maple syrup 1 small garlic clove minced salt and pepper to taste parsley optional

Lentils

360g cooked lentils 1 carrot 3 cloves garlic 1 tsp cumin finely sliced onion salt and pepper to taste cumin handful parsley fresh lemon

Preparation

Add mixed greens to bowl, then add assorted ingredients to taste along with avocado slices. Top with tahini sauce.
